Why Do Dog Chews Smell So Bad? The Science Behind the Stink

Some chews are fine and some clear a room. Here is what is actually causing the smell, whether it means the chew has gone off, and how to store treats so it gets no worse.

The short answer

Fat carries the smell and fat goes rancid, which is why an oily fish skin clears a room and lean tendon smells of almost nothing.

Strong smell is a fat signal, not a quality problem. Airtight storage somewhere cool, and the freezer for the oily ones, slows it right down.

Open a bag of dried fish skins in a small kitchen and you will have a strong opinion within about four seconds. Meanwhile a bag of tendon sits there smelling of essentially nothing.

Same category of product, same drying process, wildly different experience. Here is what is going on.

It is mostly about fat

Fat is the main carrier of aroma in any animal product, and it is also the part that degrades. When fat is exposed to oxygen it oxidises, breaking down into smaller compounds, some of which our noses find extremely objectionable. This is rancidity, and it is a gradual process that starts the moment a product meets air.

This explains almost the entire smell hierarchy of natural chews. Oily fish skins, tripe, duck and goose skin, marrow, fatty ears. All high in fat, all strong smelling. Tendon, lung, chicken breast, white fish. All lean, all mild.

It also explains why the same product can smell different between two suppliers. Trim, source animal and how quickly the raw material was processed all change the fat content, and therefore the smell.

Why fish is a special case

Fish gets its own paragraph because it deserves it.

Fish contains compounds that, once the fish is no longer alive, get broken down by bacteria and enzymes into trimethylamine. That is the specific compound your brain files under "fishy". It is volatile, it clings to fabric, and human noses are extraordinarily sensitive to it.

Oily fish like salmon and mackerel have far more of the raw material for this than white fish like cod or pollock. Which is exactly why a dried cod cube is mild and a salmon skin is a statement.

This is not a sign of a bad product. Fish skins are one of the best things you can give a dog for coat, skin and joints. It just means they are an outdoor chew.

Does the smell mean it has gone off?

Usually no. Most natural chews smell strong from day one, and that is simply what they smell like.

The things that do suggest a problem:

A sharp change in character. If a chew smelled acceptable when you opened the bag and now smells sour, bitter or paint-like, that is oxidation gone too far. Bin it.

Visible mould. Fuzzy patches, unusual discolouration, white powder that is not simply dried salt. Bin it.

Damp or soft when it should be dry. Moisture in a dried product is the beginning of a microbial problem. Bin it.

Sticky or greasy where it was not before. Fat migrating to the surface. Not immediately dangerous but the clock is running.

A properly dried chew stored well should be stable for months. The failure mode is nearly always moisture or heat, not time on its own.

How to store chews so they do not get worse

Airtight, always. The single biggest factor. Oxygen is what drives rancidity, so limiting it slows everything down. A proper sealed container, not a rolled-over bag with a peg.

Cool and dark. Heat accelerates fat oxidation dramatically. A cupboard above the oven is the worst place in the kitchen. Light does its own damage, so opaque beats clear.

Freeze the high-fat ones. Fish skins, tripe, anything oily. Freezing largely stops oxidation in its tracks and the chews are perfectly good straight out of the freezer. Dogs quite like them cold.

Split the bag. Keep a week's worth in a small container and the rest sealed elsewhere. That way you are only exposing a fraction of the stock to air each time you open something.

Do not decant into the same tub forever without washing it. Old fat residue coats the container and starts contaminating fresh chews. Wash it properly every few refills.

The mild alternatives, if you would rather avoid it entirely

Lean chews are simply less aromatic by nature. Beef tendon, dried lung, chicken breast, white fish and root chews all sit at the quiet end.

And freeze-dried products consistently smell less than air-dried equivalents, because freeze-drying removes moisture at low temperature and leaves fewer volatile compounds behind.

The reframe

Strong smell is not a quality problem. It is usually a fat content signal, and fat content often correlates with exactly the nutrients you wanted the chew for in the first place.

The right response is not to avoid smelly chews. It is to know which ones they are, store them properly, and give them somewhere ventilated.
